Our Chemical-free Organic decaf method called Mountain Water Process is remarkably like the Swiss Water method. While Swiss Water process is almost entirely performed in Canada (go figure, we don’t know either), our Mountain Water Process is a product of Mexico and uses the pure water from Pico de Orizaba—the highest mountain in Mexico.

Orizaba Mountain Water Decaf Coffee (Swiss Water-style) is a beautiful and rich decaf that calls to mind the famed Blue Mountain brews of Jamaica. The dormant 18,491 feet volcano the coffee is decaffeinated under – Pico de Orizaba – is known to native locals as Iztactépetl or ‘White Mountain.’ It’s the exceptionally clear Organic meltwater streams from the White Mountain’s nine glaciers that are responsible for the Organic quality of decaffeination. You can almost hear the Central American coffee notes of fruits, chocolate, nuts and honey (please do not pour coffee in your ear: It may be hot).
What is the Swiss Water Method?
The Swiss Water Method removes over 99.99% of the caffeine in coffee in a 5-step circular process. Our process starts and ends with Green Coffee Extract.
1. Decaffeinated Green Coffee Extract is at the heart of the art of decaffeination. We soak green coffee beans in pure, fresh water and remove the caffeine from the water by special carbon filters to create the Extract.
2. Decaffeinated Green Coffee Extract is at the heart of the art of decaffeination. We soak green coffee beans in pure, fresh water and remove the caffeine from the water by special carbon filters to create the Extract.
3. The Green Coffee Extract is introduced to these beans and is circulated for up to 10 hours until 99.99% of the caffeine has been removed from the beans. The caffeine is captured from the circulated Extract by special carbon filters.
4. The Green Coffee Extract is checked and replenished ready for the next batch.
5. The decaffeinated beans are dried and ready for our expert roasters to bring out the flavour of real coffee.
