What is the Swiss Water Method?

The Swiss Water Method removes over 99.99% of the caffeine in coffee in a 5-step circular process. Our process starts and ends with Green Coffee Extract.

Step 1: Preparation and hydration
In preparation for decaffeination, green coffee beans are gently cleaned. Our unique approach to hydration naturally expands and sets up the beans to preserve their unique characteristic
Step 2: Caffeine migration
The beans embark on their transformation journey as they meet our natural Green Coffee Extract (GCE), a 100% caffeine and chemical-free symphony of water and coffee’s essential compounds. When the GCE surrounds the beans, diffusion allows only caffeine molecules to migrate outward, while all the precious flavour and other compounds remain exactly where they belong in the coffee.
Step 3: Drying
The beans then enter our dryers where high air flow and low temperatures create a climate tailored specifically to each origin’s unique character. This custom atmospheric composition ensures consistent moisture profiles and lasting shelf life, preserving the bean’s authentic voice long after decaffeination concludes.
Step 4: Organic filtration and renewal
The caffeine-saturated GCE passes through 100% chemical-free carbon filters that selectively trap caffeine molecules while preserving all other coffee components. This refreshed GCE then continues the cycle with new beans, creating a sustainable, closed-loop process that maintains the coffee’s flavour integrity and organic certification.

the organic mountain Water Method is purer but less known than the swiss water method

Our Chemical-free Organic decaf method called Mountain Water Process is remarkably like the Swiss Water method. While Swiss Water process is almost entirely performed in Canada (go figure, we don’t know either), our Mountain Water Process is a product of Mexico and uses the pure water from Pico de Orizaba, the highest mountain in Mexico.

Step 1: Soaking the Green Beans
Raw, unroasted coffee beans are soaked in hot, pure mountain water. This draws out caffeine, including soluble flavour compounds (like oils and acids) into the water, creating a ‘green coffee extract’.
Step 2: Filtering Out the Caffeine
The extract is passed through activated charcoal filters, which remove only the caffeine molecules whilst leaving the delicious flavour behind.
Step 3: Reintroducing the Flavour
A batch of green beans are placed into the caffeine-free, flavour-rich extract. Since the water has already been saturated with the flavour, it draws out only caffeine, preserving the full taste of the beans.
Step 4: Drying and Exporting
The decaffeinated beans are gently dried and sent over to us for roasting. The final result is a naturally decaffeinated coffee that tastes remarkably close to the original.
